Many people think of coffee cake as the perfect food to serve guests that arrive for entertaining during the morning hours, in between meals, and after dinner. Coffee cake is perfect to serve with coffee preferably or tea if is the choice of your guest. It isn't incredibly difficult to make a perfectly delicious coffee cake.
Here is a recipe that will have you serving your guests coffee cake better than what Betty Crocker would make herself.
Homemade Cinnamon Coffee Cake
Coffee Cake
· ¼ cup butter (butter is preferable to margarine)
· ¾ c. sugar (if diabetic, substitute Splenda for sugar)
· 1 egg slightly beaten (again, if watching cholesterol substitute egg whites)
· 1 ½ cups flour
· 2 tsp. Baking powder
· ½ tsp. Salt
· 1 cup milk
· 1 tsp. Vanilla extract
Sugar Topping
· 1 cup brown sugar
· 3 tablespoons flour
· 4 teaspoons cinnamon
· 4 tablespoons butter
· You may add ½ of your favorite nuts if preferred. But be careful and remember some people have serious allergic reactions to nuts.
Cooking Directions
First, preheat your oven to 350 degrees. Use a 9' square baking pan, or whichever pan you prefer. Grease the pan and then lightly flour the pan. In a separate mixing bowl, blend together the butter and sugar. Slowly blend in the egg, mix together thoroughly. In a separate mixing bowl, combine the flour, baking powder and salt. To prevent the batter from getting too thick, slowly add the dry ingredients into the blended butter and sugar. Slowly add the milk, alternating the dry ingredients then milk. This will prevent the batter from getting too thick too fast, and causing difficulties in stirring. When all the coffee cake ingredients are blended, add the vanilla extract. After mixing thoroughly pour the combined ingredients into the pan.
To make the topping, slowly blend the flour, brown sugar, and cinnamon. Using a fork cut in the butter into the topping. Pour half of the topping into the batter and slowly swirl. This will make a nice blend inside the coffee cake when it is through cooking. Sprinkle the remaining topping on the top of the coffee cake. If using nuts, you can sprinkle chopped nuts on the top. Bake in pre-heated oven for 30 minutes. Test by inserting a knife into the center of the coffee cake, and remove from the oven when the knife comes out clean.
